Apple Streusel Muffins
Pieces of Ginger Gold apples are in every bite of these wonderful muffins. This recipe makes about a dozen muffins.
Ingredients
1 ½ cups all purpose flower
¾ cup sugar
1 teaspoon ground cinnamon
2 ¼ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
2 eggs
½ cup sour cream
¼ cup tart apple butter from Chattooga Belle farm
2 tablespoons melted no-salt butter
1 cup chopped peeled tart apples such as Ginger Gold
Topping
¼ cup Brown Sugar
2 tablespoons flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter
Directions:
- In a large bowl, combine dry ingredients. In another bowl, beat the eggs, sour cream, and butter. Stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full.
- For topping, combine sugar, flour and ground cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle streusel mixture on muffins. Bake at 400 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
